My Diary: Tomato and Egg Stir-fry Recipe
As a fan of Chinese cuisine, I always look for new recipes to try. Recently, I discovered the delicious and easy-to-make dish of tomato and egg stir-fry. Here's my diary of how I made it:
Ingredients
- 3 eggs
- 2 medium-sized tomatoes
- 1 tablespoon vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon white pepper
- 1/4 cup chopped scallions (optional)
Instructions
1. Beat the eggs in a bowl and set aside.
2. Cut the tomatoes into small wedges and set aside.
3. Heat the vegetable oil in a wok or frying pan over medium-high heat.
4. Add the tomatoes and stir-fry for 1-2 minutes until they start to soften.
5. Add the beaten eggs and stir-fry for another 1-2 minutes until the eggs are cooked through.
6. Add the salt, sugar, and white pepper, and stir-fry for another 30 seconds.
7. If using scallions, add them in and stir-fry for another 30 seconds.
Serving
This dish is best served hot with steamed rice. It's a perfect side dish for any Chinese meal, or you can enjoy it as a main dish with some steamed vegetables on the side. Enjoy!
