How to Make Fish-flavored Shredded Pork

Fish-flavored shredded pork is a classic Sichuan dish that is loved by many. It is a perfect combination of sweet, sour, salty, and spicy flavors. Here is a simple recipe for making this delicious dish at home.

Ingredients:

  1. 250g pork tenderloin
  2. 1/2 cup wood ear mushrooms
  3. 1/2 cup bamboo shoots
  4. 1/4 cup scallions, chopped
  5. 1/4 cup ginger, minced
  6. 2 cloves garlic, minced
  7. 1 tbsp soy sauce
  8. 1 tbsp cooking wine
  9. 1 tbsp sugar
  10. 1 tbsp vinegar
  11. 1 tbsp cornstarch
  12. 1/2 tsp salt
  13. 1/2 tsp Sichuan peppercorn powder
  14. 2 tbsp vegetable oil

Instructions:

  1. Cut the pork tenderloin into thin, bite-sized strips. Marinate the pork with soy sauce, cooking wine, sugar, and cornstarch for at least 15 minutes.
  2. Soak the wood ear mushrooms in hot water for 10 minutes, drain and cut into thin strips. Cut the bamboo shoots into thin strips as well.
  3. Heat the vegetable oil in a wok over high heat. Add the pork and stir-fry until it is no longer pink. Remove the pork from the wok and set aside.
  4. Add the scallions, ginger, and garlic to the wok and stir-fry until fragrant.
  5. Add the wood ear mushrooms and bamboo shoots to the wok and stir-fry for 2-3 minutes.
  6. Add the pork back to the wok and stir-fry for another minute.
  7. Add the salt, Sichuan peppercorn powder, soy sauce, vinegar, and sugar to the wok and stir-fry for another minute.
  8. Thicken the sauce with cornstarch and water mixture.
  9. Transfer the fish-flavored shredded pork to a serving plate and garnish with chopped scallions.
  10. Serve hot with steamed rice.
