How to Make Tomato and Egg Stir-Fry

  1. 2 tomatoes
  2. 3 eggs
  3. 1/2 tsp salt
  4. 1/4 tsp sugar
  5. 1 tbsp vegetable oil
  6. 1 green onion, chopped (optional)
  7. 1/2 tsp sesame oil (optional)

Instructions

Follow these steps to make tomato and egg stir-fry:

  1. Beat the eggs in a bowl and add 1/4 tsp salt. Mix well.
  2. Wash the tomatoes and cut them into small wedges.
  3. Heat the vegetable oil in a wok or frying pan over high heat. When the oil is hot, add the eggs and stir-fry until they are scrambled and cooked through. Remove the eggs from the wok and set aside.
  4. Add the tomato wedges to the wok and stir-fry for 1-2 minutes until they soften but are still slightly firm.
  5. Add 1/4 tsp salt and 1/4 tsp sugar to the tomatoes and stir-fry for another 1-2 minutes until the tomatoes are slightly caramelized.
  6. Add the scrambled eggs back to the wok and stir-fry for another 1-2 minutes until everything is well combined.
  7. If desired, add chopped green onion and sesame oil to the dish and stir-fry for another 30 seconds.
