Ingredients

The ingredients needed for this recipe are as follows:

  1. 1 pound pork tenderloin, sliced thinly
  2. 1 tablespoon Shaoxing wine
  3. 1 tablespoon cornstarch
  4. 1 tablespoon soy sauce
  5. 1 tablespoon sugar
  6. 1 tablespoon Chinkiang vinegar
  7. 2 tablespoons vegetable oil
  8. 1 tablespoon minced garlic
  9. 1 tablespoon minced ginger
  10. 1/2 cup sliced bamboo shoots
  11. 1/2 cup sliced black fungus
  12. 1/2 cup sliced scallions
  13. 1/2 cup sliced red bell pepper
  14. 1/2 cup chicken broth
  15. 2 tablespoons chili bean paste
  16. 2 tablespoons hoisin sauce
  17. 1 teaspoon sesame oil
  18. 1 teaspoon cornstarch mixed with 1 tablespoon water
  19. 10-12 buns

Instructions

Follow these steps to make delicious Yuxiang Rou Si buns:

  1. In a bowl, mix together the pork, Shaoxing wine, cornstarch, and soy sauce. Let marinate for 10 minutes.
  2. In another bowl, mix together the sugar and Chinkiang vinegar until the sugar dissolves.
  3. Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and ginger and stir-fry for 10 seconds.
  4. Add the pork and stir-fry until browned, about 2-3 minutes.
  5. Add the bamboo shoots, black fungus, scallions, and red bell pepper and stir-fry for another minute.
  6. Add the chicken broth, chili bean paste, hoisin sauce, and sugar-vinegar mixture. Bring to a boil and then reduce the heat to low and simmer for 5 minutes.
  7. Add the sesame oil and cornstarch-water mixture and stir until the sauce thickens.
  8. Take the buns and flatten them into circles. Place a spoonful of the Yuxiang Rou Si filling in the center of each flattened bun.
  9. Bring the edges of the bun up and around the filling, pinching them together to seal the bun.
  10. Place the buns on a steaming rack and steam for 10-15 minutes, until the buns are cooked through.
